The best part of this recipe is how little of it happens in the morning. Mix it the night before, and by the time backpacks are on, breakfast is already done. It holds up fine in a lunchbox too, if mornings are the rushed kind.
INGREDIENTS
- 1/2 cup (45 g) rolled oats
- 1/2 cup (125 ml) milk (dairy or plant-based)
- 1/4 cup (60 g) plain or vanilla yogurt
- 1 tsp (5 ml) honey or maple syrup
- 1/2 tsp vanilla extract
- Pinch of cinnamon
- Fresh berries or sliced fruit, for topping
METHOD
In a mason jar or container with a lid, combine the oats, milk, yogurt, honey, vanilla, and cinnamon.
Stir well to make sure the oats are fully submerged.
Seal and refrigerate overnight, or for at least 4 hours.
In the morning, give it a stir and add a splash more milk if it's thicker than you'd like.
Top with fresh berries or sliced fruit just before eating.
Keeps well in the fridge for up to 3 days, so it's worth making a batch of two or three jars at once.
