Easter Morning Breakfast Casserole

Whether you're looking for an easy breakfast to free up some time for egg hunting or the perfect dish for an Easter brunch potluck, breakfast casserole is your new best friend. Make this simple and super tasty dish the night before and pop it in the oven in the morning!

INGREDIENTS

  • 5 cups cubed sourdough bread - roughly 1" pieces
  • 1 cup cooked, chopped bacon - roughly 250 grams
  • 1 cup fresh spinach leaves
  • 8 eggs
  • 2 cups of milk
  • 2 cloves garlic, finely chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dried sage
  • 1 cup grated sharp cheese
  • 1/2 chopped parsley

METHOD

In an 8" - 10" (20 cm) baking dish layer bread cubes, sausage and spinach. In another bowl, whisk eggs, milk, garlic, spices and sage and pour the mixture over the bread, sausage & spinach. Sprinkle with grated cheese and black pepper. Cover and chill allowing everything to settle at least 2 hours. However the longer the better. This dish is best made the night before.On Easter morning, preheat the oven to 350°F. Bake uncovered until cooked for 50-60 minutes or until cooked through and golden brown. Let rest for 15 minutes, then sprinkle with fresh parsley and serve!
