BC Bartlett Pear & Honey Yogurt Parfait

INGREDIENTS

  • 2 BC Bartlett pears, cored and diced (leave some skin on for colour and texture)
  • 1 cup Greek yogurt (flavoured or plain)
  • 2 tsp honey (plus extra for drizzling)
  • ¼ tsp ground cinnamon (or to taste)
  • 2–3 tbsp granola or toasted almonds (optional crunch)
  • Pear sauce (optional)
  • Garnish (optional): fresh mint leaves, toasted nuts, sprig of thyme, etc

METHOD

  1. In a small bowl, stir together the yogurt, honey, and ground cinnamon until smooth and fragrant.
  2. In two serving glasses or bowls, layer half the yogurt mixture.
  3. Top each with diced BC Bartlett pears.
  4. Divide remaining yogurt over the pears, then add another layer of pears.
  5. Sprinkle granola or toasted almonds over the top and add a dollop of pear sauce, if using, and finish with an extra drizzle of honey. Garnish with mint or extra nuts if desired.
  6. Serve immediately, or chill for 10–15 minutes to meld flavours.
